I'm always looking for recipes to use ingredients from my food storage. Since it's officially potato salad weather I'll post this recipe for two minute potato and carrot salad. I have no idea where I first saw it, perhaps a blog?
This all comes from your food storage. Hopefully you stocked up on canned sliced potatoes and canned sliced carrots when they were on sale for $0.50 per can.
Drain 1 can sliced potatoes and 1 can slice carrots and add to a bowl. Add mayonnaise, dijon mustard and pepper to taste and you're done. You now have a great $1.00 side dish to go with a quick lunch.
